Ingredients
1 Head of Cauliflower
3 Cloves of Garlic
3 Tablespoons Almond Milk
1 Teaspoon Ionized Sea Salt
1 Teaspoon Coconut Oil
Directions: Steamed whole head of cauliflower. Sautee garlic in one teaspoon of coconut oil. Mashed cauliflower with hand blender. Throw in sautéed garlic, almond milk, and salt, mix and serve. Makes three servings.

Yum! I have always loved using mashed cauliflower as a substitute for mashed potatoes. To kick it up to an even more supreme level, I roast mine first and let the cauliflower caramelize a bit and use roasted garlic when mashing – soooo good!
Should I use non-fat almond milk?
Actually use unsweetened Almond Milk. Almond Milk has the nutritional profile of almonds so there is fat in there but its the good type (and its low calories- it only has 40 per cup!)
